Snobbery about Old No. 7 says more about the drinker than the whiskey. Registered in 1866 and generally cited as the oldest registered distillery in the United States, it also codified the Lincoln County Process — dripping new spirit through ten feet of sugar-maple charcoal before the barrel. That single step is the whole reason "Tennessee whiskey" is its own category and not just bourbon with an address.

Nose: banana, caramel, sweet smoke. Palate: light-bodied, toasted oak, that unmistakable charcoal sweetness. Finish: clean and short.
