Black Maple Hill 16 Year is a small batch bourbon from a label that has spent its whole life as a collector's name, built by selecting mature barrels rather than running its own stills. Sixteen years is a serious number for American whiskey. New charred oak works fast, so a bourbon that survives that long in wood without turning bitter has been chosen carefully. The nose is old leather, dark caramel and dried cherry. The palate carries toffee, tobacco leaf and stewed dark fruit over deep oak, and the finish is very long, dry and tannic with wood spice trailing behind. Drink it neat with a few drops of water and give it time.
