Erstwhile Tepeztate and Tobalá Ensamble is a joven mezcal blending two wild agave varieties — Tepeztate, which can take up to 25 years to mature, and Tobalá, another slow-growing wild species — made in Oaxaca using traditional pit-roasting and pot distillation. Blending two rare wild agaves in one ensamble is meant to combine their distinct characters: Tepeztate's herbal, vegetal intensity with Tobalá's floral delicacy. Expect roasted agave, herbs and light florals on the nose, a complex, layered palate, and a smoky, lingering finish. A rarer, connoisseur-focused bottling given how long both agaves take to mature.
