Eselo Agave Spirit is bottled as an agave spirit rather than as tequila or mezcal, the designation used when a distillate is made from agave but sits outside the denominations of origin that govern those two names. In practice that leaves the producer free on agave variety, cooking method and still, and the category has become a home for interesting bottles that would not otherwise get made. Expect a nose of roasted agave and citrus peel, a palate of cooked agave sweetness, green pepper and a mineral, faintly herbal edge, and a clean, dry finish with a peppery lift. Try it neat in a small glass, then in a margarita or paloma.
