The distillery sits in Hye, in the Texas Hill Country, where summer heat drives the whiskey deep into new charred oak and matures it harder and faster than a Kentucky rickhouse ever would. The result is dense: brown sugar, dark cherry and toasted pecan on the nose, then a thick palate of caramel, fig and char, and a long finish of leather and baking spice.
