Stiefel's Single Barrel 4 Grain Bourbon is Heritage Distilling Co.'s four-grain bourbon, drawn one cask at a time at the Gig Harbor, Washington distillery. Building the mash on four grains rather than the usual three widens the base — more cereal character and a softer edge than a straight corn-and-rye recipe delivers. Expect brown sugar, corn bread and vanilla on the nose, a palate of caramel, cinnamon and toasted grain with a rounded middle, and a finish of oak and light baking spice. Because it is single barrel, no two bottles read exactly alike. Drink it neat, or over one large cube when the room is warm.
