About this bottle
Kisi is a Kakhetian white grape that nearly disappeared in the Soviet era and has been replanted by growers looking for something with more character than bulk varieties. Fermented on its skins in qvevri — clay vessels buried to the neck in the cellar floor — it turns amber and takes on tannin the way a red does. The nose is dried pear, apricot, honeycomb and toasted nut, the palate is dry and grippy with quince, orange peel and a waxy texture, and the finish is long with a clean bitter edge. Serve it cool, not cold, with roast poultry, walnut sauces, cured meats or hard cheese.
