Three Cuts Pinot Barrel Rested is a Tasmanian gin given time in Pinot Noir barrels, which is a natural move in a place that grows serious cool-climate Pinot in the first place. The wood does two things here: it picks up a faint blush of colour and a soft tannic grip that a clear gin never has. The nose is red berry and soft oak with juniper behind; the palate runs strawberry and cherry over the botanical spice with light tannin arriving late; the finish is dry, faintly winey and medium in length.
