Old Potrero Toasted Barrel Rye is made from 100% malted rye, fermented four days and double-distilled in traditional copper pot stills — a genuinely old-school process most modern rye producers have moved away from. It matures in barrels toasted rather than charred, the wood air-dried two years before the barrel is built, which pulls a different, gentler spice than a standard charred-oak rye. As a single-barrel release, proof is barrel-specific and can run as high as 133, undiluted. This is a rye built on process as much as recipe. Start it neat, add water in small increments.
