Aging mezcal is less traditional than for tequila, since most mezcal is bottled unaged (joven) to showcase the smoky, raw agave character from the roasting process, so an anejo held a year in oak represents a deliberate departure toward a mellower, more whiskey-adjacent profile. Expect the smoke to soften under vanilla and caramel from the wood, without disappearing entirely.
