This Haystack Needle release is a bottled-in-bond, single-barrel high-rye bourbon from Redwood Empire: one distilling season, one distillery, at least four years in a federally supervised warehouse and exactly 100 proof in the glass. The extra rye in the mash pushes the whiskey toward spice rather than sweetness, and the bonded proof gives it a firmer frame than the standard range carries. Cinnamon, orange peel and vanilla lead on the nose; the palate brings caramel, black pepper and dried cherry; the finish is long, dry and oak-driven. Neat is the honest way to drink it, though it also makes a Manhattan with real backbone.
