Cenote Cristalino Anejo starts life as an anejo tequila and then passes through charcoal filtration that strips the colour back to clear while leaving the barrel character in the glass. The result reads like two spirits at once: the bright cooked agave and citrus of a blanco on the nose, then vanilla, toasted almond and soft baking spice across the palate where the oak shows up. The finish is clean and gently sweet, with agave returning at the end rather than fading out. Serve it well chilled in a small glass so the aromatics stay tight, or pour it where you want anejo depth without the colour.
