About this bottle
Don Pilar Extra Añejo is an extra añejo tequila aged forty months — thirty-six in new American white oak, then four more in French Limousin oak casks. The extended rest shows: it pours a bright golden hue and drinks like a sipping spirit, with sweet oak on the nose and a palate of toasty oak, pineapple, chocolate, and baked agave. Made from blue agave in the highlands of Jalisco and bottled at 80 proof, Don Pilar carries the butterscotch weight that separates a true extra añejo from a younger pour. The finish is slow and warm, circling back to sweet oak. Pour it neat in a snifter after dinner, the way you would treat an aged brandy, and give it a few minutes to open.
