Conejo Salvaje Blanco is unaged tequila made from blue Weber agave, bottled clear so nothing stands between the drinker and the plant. Blanco is the most honest expression in any tequila lineup: no barrel to lean on and no colour to hide behind, just cooked agave and whatever the fermentation and the still gave it. Expect a nose of roasted agave, citrus zest and wet earth, a palate of green pepper, lime and cracked white pepper, and a clean, mineral finish with a little heat at the back. Shake it into a margarita, or sip it chilled alongside a cold beer and a lime wedge.
