Caymus Cabernet Sauvignon is the wine the Wagner family built its reputation on, and the 2019 is a Napa Valley bottling in the house style: ripe, dark and generous rather than lean. Caymus picks late, which is where the density comes from. The nose is blackberry, cassis and vanilla with a note of toasted oak; the palate is full and plush, with black cherry, dark chocolate, mocha and soft, rounded tannins; the finish is long and sweet-edged. It drinks well now and will hold for years. Open it an hour ahead and serve it with a ribeye, short ribs or anything off a grill.
