Few reposado tequilas are still made like Fortaleza Reposado: agave roasted in brick ovens, crushed under a volcanic stone tahona, fermented in open wood tanks, and run twice through copper pot stills at La Fortaleza distillery in the town of Tequila. Six to nine months in American oak barrels round the spirit without burying it — cooked agave stays out front, wrapped in butterscotch, vanilla, and a dusting of black pepper. The tequila is 100% Blue Weber agave with no additives, so what the barrel and the agave built is all you taste. Drink it neat or over one large cube; save the mixing for lesser bottles.
