Erstwhile Tobalá is a single-agave joven mezcal made from 100% wild Tobalá agave, a small, slow-growing species that can take a decade or more to mature and yields far less spirit per plant than cultivated Espadín, produced in Oaxaca using traditional pit-roasting and pot distillation. Expect a delicate nose of florals, minerality and light smoke typical of Tobalá agave, a nuanced, layered palate with fruit and herbal notes, and a refined, lingering finish. It's a connoisseur's mezcal built around a rare agave rather than a mixing bottle, and one of the pricier expressions in the Erstwhile range given the scarcity of the raw material.
