Fidencio Tobala Mezcal 750ml

Fidencio Tobala is an Oaxacan mezcal made from tobala, a small wild agave that grows in shaded canyons at altitude, matures over a decade and yields a fraction of what espadin does — several times as many plants go into the same bottle. Fidencio makes it in Santiago Matatlan with pit roasting, open fermentation and copper pot distillation, so the difference you taste is the plant rather than the process. Tobala runs floral and fruity: dried flowers, mango and light smoke on the nose, a palate of stone fruit, cocoa and pepper, and a long sweet finish. Sip it neat and slowly, in a clay copita rather than a shot glass.
