Salvadores Mezcal Artesanal Tobala Joven 750 ml

Salvadores Tobala Joven is made from tobala, a small wild agave that grows in shade at altitude and yields very little sugar per plant, so it takes many more pinas to fill a bottle than espadin would. The style it produces is delicate rather than heavy, which surprises people who expect every mezcal to arrive swinging. The nose is tropical fruit, honey and light wood smoke. The palate is soft and floral, with mango, cooked agave, a little citrus and a fine mineral dryness underneath. The finish is clean, gently smoky and long. Serve it neat at room temperature and give it air; tobala opens up considerably in the glass.
