Highland Park 30 Year Old is a single malt Scotch from the Orkney Islands, matured for three decades in sherry-seasoned European and American oak. This is an old, limited release — a small parcel of casks married and bottled at a strength that shifts a little from year to year, with no age or proof taken for granted. The long time in wood builds a deep, layered pour: dried fruit, dark chocolate, and poached peach over the faint heathered peat smoke that runs through everything the Orkney distillery makes. The colour is deep amber, the texture almost oily. This is a fireside dram for a serious collector — pour it neat in a tulip glass, give it air, and take your time.
