The Macallan Harmony Collection Rich Cacao is a limited-edition Highland single malt Scotch whisky built around chocolate. Whisky maker Polly Logan worked with chocolatier Jordi Roca of El Celler de Can Roca, chasing the deep cacao character of sherry-seasoned European oak and rounding it with vanilla from sherry-seasoned American oak casks. The result drinks like dessert without the sugar: dark chocolate, dried fruit, orange peel, and soft baking spice at 44% ABV. Released in 2021 as the first bottle in the annual Harmony Collection, it sold through on release and rarely resurfaces at retail. Pour it after dinner with a square of dark chocolate and let the pairing do the talking.
