Defiant American Single Malt Whisky comes from Blue Ridge Distilling Co. in Bostic, North Carolina, one of the early producers pushing the American single malt category before it had formal legal recognition. It's made entirely from malted barley, distilled and aged at the North Carolina distillery, using the mountain climate and local water as part of its identity rather than trying to copy Scotch. Expect malt-forward sweetness, some fruit and honey character, and a smoother, less peated profile than a typical Scotch single malt.
