Weller Millennium breaks from standard distillery tradition by blending Kentucky straight wheated bourbon with straight wheat whiskey. It is a multi-vintage marriage composed of specific barrel percentages:
- 50% from the 2003 vintage
- 40% from the 2005 vintage
- 7% from the 2006 vintage
- 3% from the oldest 2000 vintage
Because it incorporates a straight wheat whiskey component (at least 51% wheat in its mashbill), it is technically categorized as a blended straight whiskey rather than a traditional straight bourbon. It is bottled at 99 proof. The presentation features a custom 750 mL crystal decanter nestled inside an illuminated display case that lights up with 99 bursts to match the bottling proof.

The inclusion of heavy wheat stocks yields a softer, sweeter profile that favors elegance over intense, fiery heat.
- Nose: Highly complex and deeply layered with aromas of rich caramel, toffee, and vanilla bean. Deeper inhalation reveals old aged oak, sweet honeycomb, cinnamon rolls, and a subtle "dusty" vintage character reminiscent of antique spirits.
- Palate: Velvet-textured and cream-forward. It leads with dark caramel, maple syrup, and vanilla custard. Complex secondary notes emerge mid-palate, highlighting baking spices like nutmeg and allspice alongside hints of sandalwood, leather, and dried fruits like apricot or figs.
- Finish: Exceptionally long, warming, and gentle. The sweet caramel tapers off into a prominent, dry oak influence. It leaves a lingering refinement of tobacco leaf, shoe leather, and soft oak spice.
