Ilegal Mezcal Joven is made from 100% espadín agave grown and harvested near San Baltazar Guelavila, Oaxaca, where the piñas are still roasted in underground pits, crushed with a stone tahona, and distilled in copper stills — traditional palenque methods rather than an industrial process. Unaged and bottled clear, it carries the smoke you'd expect from pit-roasting up front, but underneath it there's real green agave, citrus, and a mineral edge that keeps it from tasting like an ashtray. Ilegal built its name smuggling mezcal into the US before going legal, and this joven is the bottle that started it.
