Louis Roederer Collection 243 is a non-vintage Champagne from the storied Reims house, built as the successor to the brand's long-running Brut Premier. Collection 243 refers to the 243rd blend the house has assembled, drawing on reserve wines aged in large oak foudres to add depth and texture beneath the classic Champagne snap. Pinot Noir and Chardonnay dominate the blend, giving structure and citrus lift in equal measure. Expect a pale gold color, fine persistent bubbles, and a dosage kept low enough to let the fruit and chalky minerality lead. Serve it chilled in a proper wine glass, not a flute, to let the aromatics open. It works equally well as an aperitif or alongside oysters and roast chicken.
