The Producer Mezcal Espadin is a joven mezcal made by Maestro Mezcalero Juan Pacheco Santos in Ejutla, Oaxaca, from 7-year-old Espadin agave. The agave is roasted for 60 hours in a traditional underground pit, crushed with a bull-pulled stone wheel (tahona), then wild-fermented for 8 days before double distillation in a copper still. The result is crystal clear with saltwater taffy, coffee-with-creamer and mild tropical fruit on the palate, plus caramel and roasted agave, with an approachable heat that works both neat and in cocktails. A mezcal for drinkers who want traditional production without an overwhelming smoke profile.

Sip it neat in a small clay copita to start — the tahona-crushed agave's sweetness comes through clean that way. It's also approachable enough to build into a mezcal Paloma if you want something lighter on smoke than most mezcal cocktails call for.
