Devils Grin is a Texas gin, part of the wave of southwestern distillers who treat juniper as the starting point rather than the whole argument. Texas gins tend to run drier and more herbal than their English ancestors, leaning on citrus and local scrub botanicals to fill out the middle, and the flavour here follows that shape. Juniper, citrus zest and dry herbs lead the nose; the palate brings pine, coriander seed and a warm peppery middle; the finish is dry, crisp and herbal rather than sweet.
