Qvevri Wine Georgia Koncho&Co Saperavi 750ml

Saperavi is Georgia's flagship red grape and one of the few teinturier varieties in serious use anywhere: its flesh is red as well as its skin, so the wines pour almost opaque and hold acidity that most warm-climate reds lose. The name translates roughly as "dye", which tells you what growers valued first. The nose is blackberry, black plum and dried herbs, the palate is inky dark fruit with liquorice over firm tannin and bracing acidity, and the finish is long, dry and savoury. That acidity makes it unusually good with food: grilled meats, walnut sauces, tomato stews and hard cheese all work.
