Sonoma Distilling Company makes its whiskey in Sonoma County on direct-fire copper pot stills, an old and inefficient method that puts flame against the pot instead of steam through a coil, and leaves a faint char-and-caramel signature you can taste. Their straight bourbon carries it clearly: vanilla and dark caramel on the nose with a whisper of woodsmoke behind, then toffee, dried cherry and baking spice on a palate with more grip than the average California craft bourbon, closing long and oaky. It is a west coast bourbon that argues its own case rather than imitating Kentucky. Pour it neat, or build an old fashioned with a thick orange peel.
