KOVAL Rye is a single barrel whiskey from KOVAL Distillery in Chicago, made from a 100% organic rye mash bill rather than the 51% minimum most rye whiskeys use. It's aged in small, 30-gallon new charred oak barrels instead of the industry-standard 53-gallon size, which gives it more wood contact in less time, and bottled at 80 proof. The result is spicier and grainier than a bourbon-leaning rye, with pepper and clove up front, caramel and vanilla underneath, and a clean, dry finish. Since it's single barrel, expect some bottle-to-bottle variation - that's part of the appeal for anyone who likes tracking down different barrel numbers.
