Koncho & Co White is a dry Georgian white built on the country's indigenous grapes, varieties that never travelled far but have been farmed in the same valleys for centuries. This is the fresh, unoxidised side of Georgian winemaking rather than the amber, skin-contact style, so it drinks the way a crisp European white does. The nose gives green apple, pear and white flowers, the palate is dry and clean with citrus, orchard fruit and a stony mineral line running underneath, and the finish is brisk. Serve it cold as an aperitif, or with fish, salads and fresh herbs — anything that wants acidity rather than weight.
