About this bottle
Dom Pérignon P2 is the second plenitude release of a single vintage — the same base wine as the original release, aged roughly sixteen years on its lees before disgorgement instead of around eight. That extended aging transforms the wine: what starts as a precise, mineral champagne develops into something richer and more complex, with notes of brioche, dried fruit, and honeyed richness layered over the original citrus and chalk. Dom Pérignon releases each vintage at up to three plenitudes (P1, P2, P3), each marking a different window of maturity for the same wine. P2 sits at the point where age has added real depth without tipping into the rarer, more expensive P3 territory. This is a collector's and connoisseur's bottle rather than an everyday pour.
How to drink Dom Pérignon P2
Serve well chilled in a proper wine glass, not a flute, and let it sit a few minutes to show its full range of aromatics. It has enough weight to pair with richer dishes — roasted poultry or aged cheese — rather than just light aperitif fare.
