Paul John is made by John Distilleries in Goa, on India's west coast, using six-row barley grown in the Himalayan foothills and copper pot stills. India's climate is the real variable here: tropical heat drives maturation far faster than Scotland's does, so a young Indian single malt drinks with the weight of a much older Scotch — at the cost of an enormous angel's share. This unpeated bottling comes out rich and sweet, with honey, ripe banana and toffee on the nose, then malt, dark chocolate, dried fruit and warm spice across the palate, finishing long and gently oaked. Pour it neat with a single drop of water.
