About this bottle
400 Conejos Espadín Tobalá Joven blends two Oaxacan agave varieties — Espadín, harvested from the Conejos region, and wild Tobalá from the nearby Sierra Norte — into a single joven mezcal. 400 Conejos, named for the 400 rabbit gods of pulque in Aztec mythology, sources from small palenques that roast the agave hearts in an underground pit oven for three days before crushing them with a horse-drawn tahona and fermenting in open-air wooden vats. Double-distilled in copper stills, expect a smooth, earthy mezcal with smoke, citrus, and herbal notes, layered with the floral character Tobalá typically contributes. It's a bottle for exploring agave blends beyond single-varietal mezcal.
How to drink 400 Conejos Espadín Tobalá Joven
Sip it neat in a small copita to catch both agave varieties clearly — this blend loses nuance quickly over ice. Orange slices with sal de gusano on the side make the traditional accompaniment, not a mixer.
