Aguamiel Bacanora Blanco 750ml

Aguamiel Bacanora Blanco is a bacanora, the agave spirit of Sonora, made from Agave angustifolia and produced legally only since the early nineties after decades as an outlawed backcountry distillate. Bacanora is roasted in earthen pits much like mezcal, so smoke is part of its vocabulary, but Sonoran desert agave tends to give a drier, more mineral spirit than Oaxaca does. Unaged, this one leads with woodsmoke, wet stone and roasted agave on the nose, then turns green and peppery on the palate with citrus pith and a saline edge, before a dry, smoky finish. Sip it neat at room temperature, or use it wherever you would reach for a sharp mezcal.
