Empirical Ayuuk is an unaged spirit from the Copenhagen-based producer Empirical, inspired by Indigenous Mixe traditions from Oaxaca, Mexico. Rather than the agave base typical of tequila and mezcal, Ayuuk is built from a corn base and shaped by the toasted, smoky character associated with ingredients used in traditional Mixe spirit-making.
