Banhez Mezcal Artesanal Joven Maguey Mexicano comes from the same Oaxaca producer cooperative behind Banhez's other single-varietal bottlings, this time built around maguey mexicano (also called agave criollo), a wild agave with a longer maturation time than cultivated espadin. Like the rest of the Banhez range, it's roasted in an earthen pit, crushed, fermented, and distilled by hand in small batches at the palenque, then bottled without any aging. The maguey mexicano tends to produce a mezcal with a fruitier, slightly sweeter profile than more herbal wild varieties, while still carrying the earthy smoke the category is known for.
