At El Pandillo in Los Altos, the agave is slow-cooked, milled with both a tahona and a roller, and cut only with a 50/50 blend of collected rainwater and spring water — no additives at any stage, verified. The extra proof pushes the agave forward rather than burying it: wet stone and cooked agave meet cracked black pepper, cinnamon, and a run of dried herbs. The finish lands clean and mineral-dry.
