Bullmaro Raicilla de la Sierra is an unaged agave spirit from Jalisco made in the raicilla tradition — a style distilled in the sierra west of tequila country, from agave varieties that never reach a tequila bottle. Raicilla is generally cooked and fermented with far less machinery than tequila, and the result is rawer, more herbal and more clearly tied to the place it came from. Expect green pepper, wet stone and citrus peel on the nose, cooked agave, brine and a thread of smoke on the palate, and a dry, mineral finish. Sip it at room temperature beside a slice of orange, or use it where a blanco would be too polite.
