About this bottle

Caballito Cerrero Chato Añejo is an agave spirit from Santa Rita Fábrica in Jalisco, Mexico, made from the rare Chato variety of Agave angustifolia rather than the blue agave used in most tequila. It's cooked in a traditional brick steam oven, milled twice, fermented in open-air tanks with wild yeast, and rested about 13 months in a used American whiskey barrel before bottling at 48% ABV. Expect a creamy mouthfeel carrying cooked agave, oak, and unripe banana, with cinnamon and black pepper moving toward a faint peanut note on the finish. It's a bottle for agave drinkers who've already worked through the major tequila houses and want to taste a genuinely different varietal.

How to drink Caballito Cerrero Chato Añejo

Pour it neat in a small glass to let the banana and cinnamon notes open up — this isn't a mixing spirit, it's a sipping one. A small splash of water can soften the peanut note on the finish if the barrel char feels heavy.

Questions about this bottle

Is Caballito Cerrero Chato Añejo a tequila or a mezcal?

Neither, technically — it's an unclassified agave spirit made outside the certified tequila and mezcal categories, though it's produced in Jalisco using traditional agave-spirit methods.

What agave is used and how is it different from typical tequila?

It's made from the Chato variety of Agave angustifolia rather than the blue Weber agave used in tequila, giving it a distinct earthy, banana-forward character.

How is Chato Añejo aged?

It rests about 13 months in a used American whiskey barrel, which is where the oak, cinnamon, and black pepper notes in the finish come from.
