Cocijo Joven Maguey Espadin is a premium mezcal made from 100% Espadin agave. It is produced in the small village of San Juan del Rio, Oaxaca, Mexico. The agave is harvested from the surrounding hills and cooked in a traditional underground oven. The cooked agave is then crushed by a horse-drawn tahona and fermented in open-air tanks. The mezcal is then double-distilled in copper stills. The result is a smooth and smoky mezcal with notes of cooked agave, citrus, and herbs.
