Compass Box Metropolis is a Scotch whisky from the London blending house that built its name on recipes rather than on a single distillery. Founder John Glaser works as a blender first, buying casks from across Scotland, marrying the parcels together and publishing far more detail about what goes into the bottle than the category usually allows. Expect the house signature in the glass: a honeyed spine with orchard fruit and vanilla on the nose, a palate of baked apple, cereal sweetness and gentle wood spice, and a finish that turns dry and faintly smoky. Pour it neat in a tulip glass, or over one large cube.
