Dad's Hat Pennsylvania Rye Whiskey Finished in Honey Casks takes the distillery's Bristol, Pennsylvania rye and moves it into barrels that previously held honey, a finish that adds sweetness without adding sugar to the bottle. Pennsylvania rye is the older American style, softer and more floral than the rye most shelves carry. The nose is warm and sweet, with clover honey, orange peel and rye spice underneath. The palate is round and lightly viscous, honeyed grain up front, cinnamon and dill through the middle, oak arriving late. The finish is medium and gently spiced. Drink it neat, or use it in a honey-leaning old fashioned.
