About this bottle
Dom Perignon 2005 is a vintage champagne, which means every grape in the bottle comes from a single harvest rather than a blend across years, and the house only declares a vintage when it thinks the year deserves it. Chardonnay and pinot noir are blended together and then given long ageing on the lees in cellar, the stage that builds the toast and brioche character. The nose is toasted brioche, white peach and almond; the palate carries citrus and orchard fruit over a chalky mineral core; the finish is long, dry and faintly saline. Serve it around ten degrees in a white wine glass, with oysters or roast chicken.
