From one of Champagne's most celebrated modern vintages, Dom Pérignon Rosé Vintage 2008 is a rosé Champagne drawn from Pinot Noir and Chardonnay in a single exceptional year. The cool 2008 season gave the wine a spine of bright acidity, and roughly twelve years of cellar maturation settled it into harmony before release. Freeze-dried raspberry and ripe strawberry lead the glass, opening into iris, peony and a thread of white pepper on a long, precise finish. The house releases a rosé only when the vintage justifies one, and 2008 justified it emphatically. Serve it well chilled in a white-wine glass beside duck, wild salmon or an anniversary worth remembering.
