Plata means unaged: this is the spirit close to how it left the still, double-distilled and rested only briefly, so the agave shows clean and bright rather than softened by oak. The Don Ramon house draws its agave from the highlands of Jalisco, and it reads that way in the glass — cooked agave, citrus peel and a green, peppery herbal lift, closing crisp and firmly on the agave.
