Dona Vega Tobala Mezcal is a small-batch, artisanal mezcal made from wild tobalá agave. It is produced in the village of San Juan del Río, Oaxaca, Mexico, by a family of mezcaleros who have been making mezcal for generations. The tobalá agave used to make this mezcal is harvested from the wild and cooked in a traditional underground oven. The cooked agave is then crushed by a horse-drawn tahona and fermented in open-air vats. The mezcal is then double-distilled in copper stills. Dona Vega Tobala Mezcal has a smoky, earthy character with the delicate, fruity sweetness tobalá is prized for.
