Entre Besos Mezcal Artesanal Joven Espadin is an unaged Mexican mezcal made from agave espadin, the workhorse variety behind most of the category. Artesanal is a regulated production class: the agave is cooked in an earthen pit, crushed, fermented in open vessels and distilled in small stills, and that is where mezcal picks up the smoke and minerality that separate it from tequila. Expect a nose of wood smoke, roasted agave and green herbs; a palate of cooked agave, citrus, black pepper and a saline mineral streak; and a dry, smoky finish. Drink it neat at room temperature in a copita, or use it to add smoke to a paloma.
