Entre Besos Mezcal Artesanal Joven Cupreata is an unaged Mexican mezcal made from agave cupreata, a wild-growing variety that takes far longer to reach maturity than espadin and gives a rounder, fruitier read on the plant. Artesanal methods keep the character intact: agave roasted in an earthen pit, open fermentation and distillation in small stills. Expect a nose of soft wood smoke, tropical fruit and damp earth; a palate of roasted agave, stone fruit, green pepper and a clean saline edge; and a long, dry finish that turns herbal. Sip it neat and at room temperature in a wide copita, giving it a minute to open first.
