Erstwhile Espadín Capón is a limited 2018 mezcal from the Erstwhile import brand, made from capón agave — Espadín plants whose flowering stalk (quiote) is cut before it blooms, a traditional technique that redirects the plant's energy into the piña and concentrates its sugars for a richer final spirit. Made in Oaxaca using traditional pit-roasting and pot distillation. Expect roasted agave with extra sweetness and depth from the capón process, smoke and mineral notes on the nose, and a rich, earthy, smoky finish. A rarer, technique-driven bottling within the category.
